what sort of control the organizers have over exhibitor products uploading?

By default, all products being uploaded by Exhibitors will need Organizer’s approval before being released in the product showcase. 

The uploads appear in Organizer Back End for verification

Furthermore, Exhibitor packages can be created that limit the volume of products a particular Exhibitor can upload.
